  • 1 cup fresh pumpkin seeds (about 120g), rinsed and patted dry
  • 2 tablespoons olive oil (30ml)
  • 4 to 5 garlic cloves, peeled and smashed slightly
  • ¼ cup freshly grated Parmesan cheese (25g)
  • ½ teaspoon salt (3g), or to taste
  • ¼ teaspoon freshly ground black pepper (1g)
  • ½ teaspoon garlic powder (2g) – optional

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper and set aside.
  2. Clean the pumpkin seeds: Separate seeds from pumpkin guts, rinse in a colander under cold water, rubbing gently to remove stringy bits (about 2-3 minutes).
  3. Dry the seeds thoroughly: Spread rinsed seeds on a clean kitchen towel and pat dry. Let air dry for 5 minutes if possible.
  4. Smash the garlic cloves: Place peeled garlic cloves on a cutting board and use the flat side of a chef’s knife to give each a firm smack until flattened slightly.
  5. Toss everything together: In a medium mixing bowl, combine dried pumpkin seeds, olive oil, smashed garlic cloves, grated Parmesan, salt, pepper, and garlic powder (if using). Mix until every seed is coated.
  6. Spread on the baking sheet: Pour mixture onto prepared baking sheet and spread into a single layer, tucking garlic cloves among the seeds.
  7. Roast for 12-15 minutes: Place on middle rack. After 8 minutes, shake the pan to redistribute. Watch closely toward the end; seeds should be fragrant and golden brown, garlic soft and caramelized.
  8. Cool completely: Remove from oven and let cool on pan for at least 10 minutes. Seeds will continue crisping.
  9. Remove the garlic cloves: Once cooled, pick out roasted garlic cloves (eat them or save for another use).
  10. Break apart any clumps: Use fingers to gently break up clusters of seeds.

Notes

Dry seeds thoroughly to ensure crispiness. Do not overcrowd the pan; use two pans if needed. Watch garlic closely to prevent burning. Let seeds cool completely before storing to maintain crunch. For dairy-free, use nutritional yeast instead of Parmesan. For vegan, use coconut oil and skip cheese, adding extra garlic powder and smoked paprika.
