  • 6 ounces pound cake or angel food cake, cut into 1-inch cubes
  • 1 cup heavy whipping cream, chilled
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Prepare the berry mixture: In a medium bowl, combine the sliced strawberries, blueberries, and raspberries. Add the strawberry jam and fresh lemon juice, then gently toss everything together. Let it sit for 10 minutes to macerate.
  2. Cut the cake into roughly 1-inch cubes and spread them out on a plate or tray.
  3. Make the whipped cream: Pour the chilled heavy cream into a cold mixing bowl. Beat on medium speed until the cream starts to thicken. Add powdered sugar and vanilla extract. Continue to whip until soft peaks form.
  4. Layer the trifle: Spoon a layer of cake cubes at the bottom of your trifle bowl. Add a generous layer of the berry mixture including some syrupy juices. Spread a thick layer of whipped cream over the berries. Repeat layers until the bowl is full, finishing with whipped cream on top.
  5. Garnish with whole berries and a mint leaf if desired. Cover with plastic wrap and refrigerate for at least 2 hours before serving.
