These easy 3-ingredient freezer breakfast burritos are the ultimate solution for busy mornings. Made with just eggs, frozen shredded hash browns, and cheese, they are quick to prepare, freezer-friendly, and deliciously satisfying.

  • 3 cups frozen shredded hash browns (such as Ore-Ida)
  • 2 cups shredded cheddar or Mexican blend cheese
  • 810 large flour tortillas (10-inch, burrito-sized)
  • Butter or oil for cooking

Instructions

  1. Cook the hash browns: Heat a large non-stick skillet over medium-high heat. Add 1 tablespoon of butter or oil. Add the frozen shredded hash browns and spread into an even layer. Cook undisturbed for 3-4 minutes until golden and crispy on the bottom. Flip and cook for another 2-3 minutes. Transfer to a plate and set aside.
  2. Scramble the eggs: In a medium bowl, whisk the eggs until fully combined. Lower the heat to medium-low and add another pat of butter to the skillet. Pour in the eggs and let sit for 30 seconds. Gently push the cooked edges toward the center until the eggs are just set but still soft and glossy. Remove from heat immediately.
  3. Assemble the burritos: Lay a tortilla flat. Place about 1/3 cup of crispy hash browns in the center, slightly off-center toward you. Top with about 1/4 cup of scrambled eggs and sprinkle with about 1/4 cup of shredded cheese. Fold the sides inward, then fold the bottom edge up and over the filling, tucking tightly. Roll the burrito away from you until closed. Place seam-side down on a baking sheet.
  4. Cool completely: Let the assembled burritos sit on the baking sheet at room temperature for 10-15 minutes until completely cool. Do not skip this step to avoid sogginess.
  5. Wrap for freezing: Once cooled, wrap each burrito tightly in aluminum foil. Place the foil-wrapped burritos in a gallon-sized freezer bag, squeeze out excess air, and seal. Label with the date. Freeze for up to 3 months.

For best results, let eggs come to room temperature before scrambling. Do not overcook eggs—they should be soft as they will finish cooking during reheating. Place a paper towel under each burrito before wrapping in foil to absorb excess moisture. For reheating, remove foil and paper towel, wrap in a damp paper towel, and microwave on high for 1 minute, flip, and microwave for another 30-60 seconds. Alternatively, reheat in an air fryer at 350°F for 8-10 minutes.
