These easy baked cranberry brie bites in phyllo cups are a quick and impressive appetizer, featuring warm, melted brie and sweet-tart cranberries in a crispy, buttery shell. Ready in just 20 minutes, they’re perfect for any occasion.

Ingredients

Scale
  • 1 package (15 count) frozen mini phyllo tart shells (like Athens or Pepperidge Farm)
  • 8 ounces (225g) cold brie cheese, rind removed and cut into small cubes (about 1/2-inch pieces)
  • 1/2 cup (160g) whole berry cranberry sauce (homemade or canned)
  • 2 tablespoons (30ml) honey (optional, for drizzling)
  • Fresh rosemary or thyme, for garnish (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Arrange frozen phyllo tart shells on a baking sheet (or in a mini muffin tin). No need to thaw.
  3. Cut the rind off the brie and discard. Cut cheese into small cubes, about 1/2-inch in size.
  4. Place a small spoonful of cranberry sauce (about 1 teaspoon) into the bottom of each phyllo cup. Top with a cube of brie.
  5. Bake for 8-10 minutes, until brie is melted and bubbly and phyllo cups are golden brown and crispy.
  6. Remove from oven and let cool for 2-3 minutes. Drizzle with honey (if using) and garnish with fresh rosemary or thyme.
  7. Serve immediately while warm.

Notes

Don’t overfill the cups to prevent sogginess. Use cold brie for easier cutting. Watch the oven closely as phyllo can burn quickly. Let cool slightly before serving to avoid burning your mouth. Can be assembled up to 2 hours ahead and refrigerated, then baked just before serving.
