  • 1/4 teaspoon flaky sea salt (optional)
  • 1/4 cup chopped salted peanuts (optional)

  • 1/4 cup crushed pretzels (optional)

Instructions

  1. Line your baking sheet with parchment paper, pressing it flat. Crumple the parchment first if it curls to keep it flat.
  2. Pour white chocolate chips into a microwave-safe bowl. Microwave on high for 30 seconds, then stir. Microwave for another 20 seconds, then stir. Repeat in 15-second intervals, stirring between each, until mostly melted with a few small lumps. Stop heating and stir until smooth.
  3. Pour candy corn into the melted white chocolate and gently fold until evenly distributed. Work quickly to avoid the chocolate setting.
  4. Scrape the mixture onto the center of the parchment-lined sheet. Use an offset spatula or butter knife to spread into an even layer about 1/4-inch thick. Rustic edges are fine.
  5. Sprinkle flaky sea salt evenly over the top while the chocolate is still wet.
  6. If using optional toppings (peanuts, dried cranberries, crushed pretzels, orange zest), sprinkle them on now and press gently into the chocolate.
  7. Place the baking sheet in the refrigerator, flat and level, for 20-30 minutes until completely set and firm to the touch. For a quicker set, freeze for 10-15 minutes.
  8. Once set, lift the parchment off the baking sheet. Place on a cutting board and break into irregular 2-3 inch pieces using your hands.
  9. Serve immediately or store in an airtight container at room temperature for up to two weeks.

Don’t overheat the white chocolate—use short microwave bursts and stir between each. Room temperature candy corn works best; cold candy corn can cause the chocolate to seize. Let the bark sit at room temperature for 5 minutes before breaking to avoid shattering. The flavor improves after a day as the candy corn softens slightly. For a vegan version, use dairy-free white chocolate and vegan candy corn. Store in an airtight container at room temperature for up to two weeks, or refrigerate for up to three weeks.
