Easy Cozy Cinnamon Apple Cider Cake with Brown Sugar Glaze

  • 1 ½ teaspoons baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves
  • ½ cup (113g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • ½ cup (100g) packed light brown sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 cup (240ml) apple cider, room temperature
  • ½ cup (100g) packed light brown sugar (for glaze)
  • ¼ cup (60ml) heavy cream (for glaze)
  • 2 tablespoons (28g) unsalted butter (for glaze)
  • ¼ teaspoon vanilla extract (for glaze)
  • Pinch of salt (for glaze)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan and line the bottom with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves. Set aside.
  3. In a large bowl, beat softened butter, granulated sugar, and brown sugar together until light and fluffy, about 3-4 minutes.
  4. Beat in eggs one at a time, then add vanilla extract and beat for 30 seconds.
  5. With mixer on low, add one-third of the flour mixture, mixing until just combined. Add half of the apple cider, mix. Repeat with another third of flour, remaining cider, and final third of flour. Fold batter with a rubber spatula.
  6. Pour batter into prepared pan and spread evenly.
  7. Bake for 40-45 minutes, until a toothpick inserted in center comes out clean. Cool in pan for 15 minutes, then turn out onto a cooling rack. Remove parchment and cool completely (at least 1 hour).
  8. For the glaze: In a small saucepan, combine brown sugar, heavy cream, and butter. Cook over medium heat, stirring constantly, until smooth. Let simmer for 2-3 minutes. Remove from heat and stir in vanilla and salt. Cool for 5-10 minutes.
  9. Place cooled cake on a serving plate. Pour glaze over top, letting it drip down sides. Let set for at least 15 minutes before slicing.

Notes

For more intense apple flavor, reduce 1 ½ cups apple cider to 1 cup by simmering. Let cool before adding to batter. The cake tastes even better on day two. Store in an airtight container at room temperature for up to 3 days, or freeze for up to 3 months.
