Ingredients

Scale
  • 4 boneless pork chops, about 1-inch thick
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1 cup panko breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon onion powder
  • 2 large eggs
  • 1 tablespoon Dijon mustard
  • 1 tablespoon mayonnaise
  • Olive oil cooking spray

Instructions

  1. Pat the pork chops dry with paper towels. Trim excess fat, then season both sides with salt, pepper, garlic powder, and paprika. Let sit at room temperature for 10 minutes.
  2. In one shallow bowl, whisk together eggs, Dijon mustard, and mayonnaise until smooth. In another shallow bowl, combine panko breadcrumbs, Parmesan cheese, Italian seasoning, and onion powder.
  3. Dip each pork chop into the egg mixture, letting excess drip off, then press firmly into the panko mixture to coat both sides. Place on a plate and repeat with remaining chops.
  4. Preheat air fryer to 400°F for 3 minutes.
  5. Lightly spray the air fryer basket with cooking spray. Place pork chops in a single layer without touching. Spray tops with cooking spray.
  6. Cook at 400°F for 8 minutes. Flip carefully, spray the other side, and cook for another 4-6 minutes until internal temperature reaches 145°F.
  7. Transfer to a plate and let rest for 5 minutes before serving.

Notes

Don’t skip drying the pork chops—moisture prevents crispiness. Let coated chops rest 2-3 minutes before cooking. Use a meat thermometer to avoid overcooking. For gluten-free, substitute panko with gluten-free breadcrumbs or crushed pork rinds.
