This cozy overnight crockpot chicken breast recipe delivers perfectly juicy, tender chicken every time with minimal effort. Prep everything in 10 minutes the night before, then let your slow cooker do the work for a comforting, stress-free dinner.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts (about 1.5 to 2 pounds total)
  • 1 cup (240 ml) low-sodium chicken broth
  • 2 tablespoons unsalted butter, melted
  • 4 garlic cloves, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1 teaspoon onion powder
  • 1 teaspoon fine sea salt
  • 1/2 teaspoon freshly ground black pepper
  • 2 tablespoons lemon juice (about half a lemon)
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)

Instructions

  1. In a small bowl, combine the melted butter, minced garlic, dried thyme, dried rosemary, onion powder, salt, and black pepper. Whisk until it forms a smooth paste.
  2. Pat the chicken breasts dry with paper towels. Place them in the bottom of your crockpot insert in a single layer.
  3. Using a brush or your fingers, spread the butter mixture evenly over the tops of the chicken breasts.
  4. Slowly pour the chicken broth around the edges of the chicken (not directly over the top), then drizzle the lemon juice over the chicken. The liquid should come about halfway up the sides of the chicken; add more broth or water if needed.
  5. Cover the crockpot insert and refrigerate for at least 8 hours, or up to 12 hours.
  6. In the morning, place the insert in the slow cooker base. Set to low and cook for 6 to 8 hours. Do not cook on high.
  7. After 6 hours, check the internal temperature with a meat thermometer; it should read 165°F (74°C). If not, cook for another 30 minutes to an hour.
  8. Turn off the crockpot and let the chicken rest in the liquid for 10 minutes. Transfer the chicken to a cutting board using tongs and let rest for another 5 minutes before slicing or shredding.

Notes

The overnight rest is crucial for moisture and flavor. Do not cook on high. Use a meat thermometer for best results. The lemon juice is non-negotiable—it brightens the dish. For dairy-free, substitute butter with olive oil or plant-based butter.
