  • 1/3 cup honey
  • 1/3 cup low-sodium soy sauce
  • 4 cloves garlic, minced
  • 2 tablespoons ketchup
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 2 tablespoons cornstarch
  • 2 tablespoons cold water
  • Salt and pepper, to taste
  • Optional: sliced green onions, sesame seeds, red pepper flakes for garnish

Instructions

  1. Pat the chicken thighs dry with paper towels and season lightly with salt and pepper. Place them in a single layer at the bottom of the slow cooker.
  2. In a medium bowl, whisk together honey, soy sauce, minced garlic, ketchup, rice vinegar, and sesame oil. Pour the sauce evenly over the chicken.
  3. Cover and cook on LOW for 4 to 5 hours or on HIGH for 2.5 to 3 hours, until the chicken reaches an internal temperature of 165°F.
  4. About 30 minutes before the cooking time is up, carefully remove the chicken from the slow cooker using tongs and set it aside on a plate.
  5. In a small bowl, whisk together cornstarch and cold water until smooth. Pour the slurry into the slow cooker with the sauce, turn the heat to HIGH, and whisk until the sauce thickens, about 2 to 3 minutes.
  6. Return the chicken to the pot and shred it with two forks, or serve the chicken pieces whole with the sauce spooned over the top.
  7. Garnish with sliced green onions, sesame seeds, and red pepper flakes if desired. Serve immediately over steamed rice, noodles, or with roasted vegetables.

Notes

For best texture, use chicken thighs. If using chicken breasts, check at the 3-hour mark on low to prevent drying. The sauce can be doubled if you like extra. Add vegetables like broccoli or bell peppers during the last 30 minutes of cooking. Leftovers keep in the refrigerator for up to 4 days and freeze well for up to 3 months.
