Easy Crockpot Queso Dip: Best Chorizo Recipe

This easy crockpot queso dip with chorizo is the ultimate set-it-and-forget-it appetizer. Smoky, spicy chorizo and creamy melted cheese come together in the slow cooker for a crowd-pleasing dip that’s perfect for game day, potlucks, or any gathering.

  • 1 pound ground chorizo
  • 16 ounces Velveeta cheese, cubed
  • 8 ounces cream cheese, softened and cubed
  • 1 can (10 ounces) Rotel tomatoes and green chilies, undrained
  • 1/2 cup milk or half-and-half
  • 1 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • Optional: 1-2 jalapeños, seeded and minced
  • Optional garnish: chopped cilantro, diced tomatoes, sliced green onions

Instructions

  1. Brown the chorizo (5-7 minutes): Heat a large skillet over medium-high heat. Add the ground chorizo and break it up with a wooden spoon. Cook, stirring occasionally, until the chorizo is browned and cooked through, about 5-7 minutes.
  2. Drain the chorizo: Transfer the cooked chorizo to a plate lined with paper towels. Let it drain for a minute or two to remove excess grease.
  3. Prepare the slow cooker: Spray the inside of your slow cooker with non-stick cooking spray. Add the cubed Velveeta, cubed cream cheese, and the undrained can of Rotel to the slow cooker.
  4. Add the chorizo and seasonings: Add the drained chorizo to the slow cooker. Sprinkle the ground cumin and garlic powder over everything. Give it a quick stir to combine.
  5. Pour in the milk: Add 1/2 cup of milk or half-and-half.
  6. Cook on low (2 hours): Cover the slow cooker with the lid and cook on LOW for 2 hours. Do not cook on high.
  7. Stir halfway through (optional but recommended): After about 1 hour, give the queso a good stir.
  8. Check consistency after 2 hours: After 2 hours, give the queso a final stir. If too thick, stir in an additional 1/4 cup of milk until desired consistency.
  9. Adjust seasoning (optional): Taste and adjust seasoning if needed. Add minced jalapeño or hot sauce for more spice.
  10. Serve warm: Switch the slow cooker to the WARM setting. Garnish with chopped cilantro, diced tomatoes, or sliced green onions if desired. Serve with tortilla chips, pretzel bites, or fresh vegetables.

Notes

Don’t skip browning the chorizo—it adds depth of flavor. Cube the cheese small for even melting. Use low heat, not high, to prevent graininess. Stir at least once halfway through. Keep on WARM setting after cooking. Queso thickens as it sits; add warm milk to thin if needed. This queso tastes even better the next day.
