  • 1 red bell pepper, sliced into strips
  • 1 yellow bell pepper, sliced into strips
  • 1 cup cherry tomatoes, halved
  • 4 cloves garlic, minced
  • 3 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 1 teaspoon paprika (smoked paprika recommended)
  • ½ teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • 2 tablespoons fresh parsley, chopped for garnish
  • Juice of ½ lemon
  • Cooked rice or quinoa (about 2 cups, for serving)

Instructions

  1. Prep your ingredients: Peel and devein shrimp if not already done. Pat shrimp dry with paper towels. Season shrimp with ½ teaspoon salt, ¼ teaspoon black pepper, and paprika. Toss to coat. Slice zucchini into half-moons, bell peppers into strips, and halve cherry tomatoes. Mince garlic and chop parsley.
  2. Heat the pan: Place a large skillet over medium-high heat. Add 1 tablespoon olive oil and 1 tablespoon butter. Let butter melt and foam, but not brown.
  3. Sear the vegetables: Add zucchini and bell peppers to the pan in a single layer. Cook undisturbed for 2 minutes, then toss and cook for another 2-3 minutes until tender-crisp. Add cherry tomatoes and cook for 1 minute. Remove veggies to a plate.
  4. Cook the shrimp: Add remaining 1 tablespoon olive oil to the pan. Place seasoned shrimp in a single layer. Cook for 1½-2 minutes per side until pink and opaque. Remove shrimp to the plate with veggies.
  5. Make the garlic butter sauce: Reduce heat to low. Add remaining 2 tablespoons butter. Once melted, add minced garlic and red pepper flakes. Cook for 30-45 seconds, stirring constantly, until fragrant. Add lemon juice and stir.
  6. Bring it all together: Return shrimp and veggies to the pan. Toss gently to coat in sauce. Cook for 30 seconds to warm through. Adjust seasoning with salt and pepper. Sprinkle with fresh parsley.
  7. Serve immediately: Transfer to a serving platter or bowl. Serve over rice, quinoa, or with crusty bread. Garnish with extra lemon wedges.

Pat shrimp dry for best sear. Don’t crowd the pan; cook in batches if needed. Watch garlic closely to avoid burning. Use room temperature shrimp for even cooking. Season as you go for layered flavor.
