Ingredients

Scale
  • 1 pound fresh green beans, trimmed
  • 8 to 10 slices thick-cut bacon
  • 3 tablespoons unsalted butter, melted
  • 4 cloves fresh garlic, minced
  • 1/3 cup grated Parmesan cheese
  • 1/2 teaspoon fine sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 tablespoons melted butter (for glaze)
  • 2 cloves garlic, minced (for glaze)
  • 2 tablespoons grated Parmesan cheese (for glaze)
  • 1 tablespoon chopped fresh parsley (optional, for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a rimmed baking sheet with parchment paper or aluminum foil.
  2. Rinse 1 pound of fresh green beans under cold water and trim off the stem ends. Pat them dry with a clean kitchen towel.
  3. Optional: Blanch the beans by bringing a large pot of salted water to a boil. Drop the green beans in and cook for 2 minutes, then transfer to a bowl of ice water to stop the cooking. Drain and pat dry.
  4. Divide the beans into 8 bundles, each containing about 8 to 10 green beans.
  5. Wrap each bundle with one slice of thick-cut bacon, tucking the end underneath. Place seam-side down on the prepared baking sheet, leaving space between bundles.
  6. In a small bowl, combine 3 tablespoons melted unsalted butter, 4 cloves minced garlic, 1/2 teaspoon salt, 1/4 teaspoon black pepper, and optional red pepper flakes. Stir well.
  7. Brush each bundle with the garlic butter mixture, reserving any leftover butter for basting later.
  8. Bake for 15 minutes.
  9. Remove from the oven and flip each bundle using tongs. Brush with the reserved garlic butter and sprinkle half of the Parmesan cheese over the bundles.
  10. Return to the oven and bake for another 10 to 12 minutes, until bacon is crispy and cheese is melted and golden.
  11. Remove from the oven. Drizzle with the garlic butter glaze (2 tablespoons melted butter, 2 cloves minced garlic, 2 tablespoons grated Parmesan). Sprinkle with fresh parsley if desired. Let rest for 2 minutes before serving.

Notes

For best results, use thick-cut bacon and pat green beans dry to ensure crispy bacon. If bacon isn’t crispy after baking, broil for 1-2 minutes. Leftover bundles can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in a 350°F oven for 5-7 minutes. Unbaked bundles can be frozen for up to 3 months.
