  • 1/2 cup caramel sauce
  • 4 ounces brie cheese
  • 2 ounces sharp cheddar cheese
  • 1 cup mini pretzels or pretzel sticks
  • 1/4 cup walnuts
  • 2 tablespoons honey
  • Flaky sea salt (for finishing)
  • 1 tablespoon lemon juice (for apple prep)
  • Pinch of salt (for apple prep)
  • Optional: dark chocolate chips, dried cranberries, fresh rosemary sprigs

Instructions

  1. Wash and dry 2 medium apples. Slice into thin wedges, about 1/4 inch thick. Remove cores and seeds. Toss slices in a bowl with 1 tablespoon lemon juice and a pinch of salt. Let sit for 5 minutes, then pat dry with a paper towel.
  2. Pour 1/2 cup caramel sauce into a small saucepan. Warm over low heat for 2-3 minutes, stirring occasionally, until loose and drizzle-able. Alternatively, microwave in 15-second bursts. Set aside to cool slightly.
  3. In a dry skillet over medium heat, toast 1/4 cup walnuts for 2-3 minutes, shaking frequently, until fragrant and lightly golden. Remove from heat and let cool.
  4. Take brie out of the fridge 20 minutes before serving to soften. Slice into wedges or leave whole. Cube sharp cheddar into 1/2 inch pieces.
  5. Arrange the board: place brie in the center or slightly off-center. Add cheddar cubes nearby. Fan out apple slices in a crescent around the cheese. Fill gaps with pretzels, walnuts, and any optional extras. Drizzle warm caramel over apples and brie, then drizzle honey. Sprinkle flaky sea salt over everything.
  6. Serve immediately within 30 minutes of assembling. Place in the center of the table with small plates and forks.
