  • 8 oz sharp cheddar cheese (block)
  • 6 oz aged gouda (wedge)
  • 8 oz brie cheese (whole wheel)
  • 4 oz pepperoni slices
  • 3 oz prosciutto (thinly sliced)
  • 1 cup pretzel sticks
  • 1 sleeve graham crackers (broken into pieces)
  • 1 cup red grapes (washed)
  • 1/2 cup black olives (pitted)
  • 1/4 cup roasted and salted pumpkin seeds
  • Fresh rosemary sprigs (for decoration)
  • 2 tablespoons Halloween sprinkles (optional)

Instructions

  1. Prep your board: Start with a clean, dry board. Place it in the fridge for 10 minutes to keep cheese from getting greasy. Put small bowls for candy corn and olives in the upper corners or center.
  2. Place the brie: Unwrap the brie and place it whole in the center-left of the board. Let it sit at room temperature for 15 minutes before serving. Score the top in a crisscross pattern if desired.
  3. Cut the cheddar and gouda: Slice sharp cheddar into 1-inch cubes and aged gouda into thin wedges. Arrange them in two separate clusters near the brieโ€”cheddar on the right, gouda on the top. Leave a gap for the candy corn web.
  4. Make the prosciutto roses: Fold a slice of prosciutto in half lengthwise, roll it up loosely from one end, then pull the outer layers back to form a rose. Place 3-4 roses around the brie.
  5. Fold the pepperoni: Layer pepperoni slices in stacks of 3, then fold each stack in half. Arrange them in a cluster near the gouda.
  6. Create the candy corn spider web: Arrange a small handful of candy corn in a curved line between the cheddar and gouda. Add a second curved line crossing the first to form a loose web. Fill the center with more candy corn.
  7. Add the crackers and pretzels: Fan out graham cracker pieces along the bottom edge of the board. Stick pretzel sticks upright in the cheddar cubes like fence posts.
  8. Scatter the grapes and olives: Place red grapes in small clusters around the edges. Dot black olives between cheese clusters.
  9. Sprinkle the pumpkin seeds: Toss roasted pumpkin seeds lightly over the whole board, especially over cheese and around the candy corn web.
  10. Garnish with rosemary: Tuck fresh rosemary sprigs under the brie and around the edges of the board.
  11. Final touch: Sprinkle Halloween sprinkles lightly over the brie and cheddar. Add extra candy corn pieces around the edges. Serve immediately, or cover loosely with plastic wrap and refrigerate for up to 2 hours. Let sit at room temperature for 15 minutes before serving.

Notes

Don’t overload the boardโ€”leave about 20% empty for a cleaner look. Take cheese out of the fridge 30 minutes before assembling for best flavor. Keep candy corn away from wet ingredients to prevent stickiness. Assemble no more than 2 hours before serving. Use the ‘three of everything’ rule for visual balance.
