  • 2 tablespoons brown sugar (light or dark)

  • 1 teaspoon vanilla extract (pure)
  • 1/4 teaspoon salt

  • 1 tablespoon ground cinnamon
  • 2 teaspoons ground ginger
  • 1 teaspoon ground nutmeg
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground allspice

Instructions

  1. Combine the wet ingredients. In a medium saucepan, whisk together the water, pumpkin puree, and brown sugar until the pumpkin is fully incorporated.
  2. Add the sugar and spices. Pour in the granulated sugar, pumpkin pie spice, and salt. Whisk until the sugar starts to dissolve.
  3. Heat and stir. Place the saucepan over medium heat. Stir occasionally with a whisk, scraping the bottom and sides to prevent sticking. Bring to a gentle simmer (small bubbles around the edges), about 5-7 minutes.
  4. Simmer gently. Reduce heat to low and cook for 8-10 minutes, stirring every minute or so. The mixture will thicken slightly and the flavors will meld.
  5. Remove from heat and add vanilla. Take the pan off the burner and stir in the vanilla extract.
  6. Strain the syrup. Place a fine-mesh strainer over a heat-safe bowl or storage jar. Carefully pour the syrup through the strainer. Use a spoon to gently press the solids through.
  7. Cool and store. Let the syrup cool completely at room temperature (about 30-40 minutes). Transfer to a glass jar, seal tightly, and refrigerate.
