A nostalgic and easy-to-make blackberry cobbler featuring a moist, flaky buttermilk biscuit topping that balances tart berries with a tender crust.

Ingredients

Scale
  • 4 cups fresh blackberries (or frozen, thawed and drained)
  • 3/4 cup granulated sugar (adjust based on sweetness of berries)
  • 2 tablespoons cornstarch
  • 1 teaspoon fresh lemon juice
  • 1/2 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 6 tablespoons unsalted butter, cold and cubed
  • 3/4 cup buttermilk, cold

Instructions

  1. In a large bowl, gently toss together blackberries, 3/4 cup sugar, cornstarch, lemon juice, and vanilla extract. Set aside for 10 minutes to macerate.
  2. Preheat oven to 375°F (190°C). Lightly grease an 8×8-inch baking dish.
  3. Transfer the berry mixture evenly into the baking dish.
  4. In a medium bowl, whisk together flour, 2 tablespoons sugar, baking powder, baking soda, and salt.
  5. Cut cold butter into the dry ingredients using a pastry cutter or knives until mixture resembles coarse crumbs with pea-sized pieces.
  6. Add cold buttermilk and stir gently just until dough comes together; do not overmix.
  7. Drop biscuit dough by spoonfuls evenly over the blackberry filling.
  8. Bake on middle rack for 35-40 minutes until biscuit topping is golden brown and filling is bubbling. Tent with foil after 25 minutes if topping browns too quickly.
  9. Let cobbler cool for about 15 minutes before serving.

Notes

Keep butter cold for flaky biscuit topping. Do not overmix biscuit dough to avoid toughness. Adjust sugar based on berry sweetness. Thaw and drain frozen berries to prevent soggy crust. Tent with foil if topping browns too fast. Can substitute almond flour for gluten-free and use dairy-free alternatives for buttermilk.
