These keto cucumber salmon bites combine crisp cucumber slices with silky cream cheese, fresh smoked salmon, and everything bagel seasoning for a light, fresh, and satisfying snack or appetizer.

  • 1 large English cucumber, sliced into 1/4-inch rounds
  • 4 ounces smoked salmon, thinly sliced
  • 4 ounces cream cheese, softened
  • 2 tablespoons everything bagel seasoning
  • 1 teaspoon freshly squeezed lemon juice
  • 1 tablespoon fresh dill, chopped (optional)
  • Salt and pepper to taste
  • Optional garnish: capers or finely diced red onion

Instructions

  1. Rinse and dry the cucumber thoroughly. Slice into 1/4-inch thick rounds (about 20-24 slices). Pat dry with paper towels to remove excess moisture.
  2. In a medium bowl, combine softened cream cheese with lemon juice, chopped dill, and a pinch of salt and pepper. Whip until smooth and creamy.
  3. Spread about 1 teaspoon of the cream cheese mixture evenly over each cucumber slice.
  4. Place a small piece of smoked salmon on top of the cream cheese on each cucumber slice.
  5. Sprinkle each bite with a pinch of everything bagel seasoning. Add capers or diced red onion if desired.
  6. Arrange the bites on a serving platter and refrigerate for 10-15 minutes if you prefer them chilled, or serve immediately.

Notes

Pat cucumber slices dry to avoid soggy bites. Soften cream cheese at room temperature for easier spreading. Assemble close to serving time to keep cucumbers crisp. Everything bagel seasoning should be sprinkled lightly to avoid overpowering the salmon.
