This creamy, spicy, and cheesy buffalo chicken dip is the ultimate game day appetizer. Made with simple ingredients and ready in about 30 minutes, it’s a crowd-pleaser that disappears fast.

  • 8 oz cream cheese, softened
  • 1/2 cup sour cream
  • 1/2 cup ranch dressing
  • 1/3 cup buffalo hot sauce (like Frank’s RedHot)
  • 2 cups cooked, shredded chicken
  • 1 1/2 cups shredded sharp cheddar cheese, divided
  • 1/2 cup shredded Monterey Jack cheese, divided
  • 2 green onions, thinly sliced (optional, for topping)
  • 1/4 cup crumbled blue cheese (optional, for topping)

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease an 8×8 or 9×9 baking dish.
  2. In a mixing bowl, beat the softened cream cheese with a hand mixer or spatula until completely smooth and fluffy (about 1-2 minutes).
  3. Add the sour cream and ranch dressing to the bowl. Mix until well combined and smooth.
  4. Pour in the buffalo hot sauce and mix again until fully incorporated.
  5. Fold in the shredded chicken, 1 cup of the shredded cheddar cheese, and 1/4 cup of the Monterey Jack cheese. Stir until evenly distributed.
  6. Spoon the mixture into the prepared baking dish and spread into an even layer.
  7. Sprinkle the remaining 1/2 cup of cheddar and 1/4 cup of Monterey Jack cheese evenly over the top.
  8. Bake for 20-25 minutes, or until the dip is hot and bubbly around the edges and the cheese on top is melted and starting to turn golden brown.
  9. Remove from the oven and let it rest for about 5 minutes.
  10. Sprinkle sliced green onions and crumbled blue cheese over the top, if using. Serve immediately with sturdy chips, celery sticks, carrot sticks, or toasted baguette slices.

Notes

For best results, use full-fat cream cheese and shred your own cheese from a block. Let the dip rest for 5 minutes after baking to thicken. To make ahead, assemble without the final cheese topping, cover, and refrigerate for up to 24 hours; add cheese and bake for about 35 minutes.
