  • 1 tablespoon fresh lemon juice

Instructions

  1. If not using pre-cooked chicken, poach or roast about 2 small chicken breasts (approximately 12 oz / 350g). Let cool slightly, then shred with two forks into bite-sized pieces (about 10 minutes).
  2. Finely chop 2 celery stalks and halve 1/2 cup of red grapes. Chop 2 tablespoons of parsley if using (about 5 minutes).
  3. In a medium mixing bowl, combine 1/2 cup mayonnaise, 1 teaspoon Dijon mustard, and 1 tablespoon fresh lemon juice. Stir until smooth and creamy.
  4. Add shredded chicken, celery, grapes, and parsley to the bowl with the dressing. Gently fold until evenly coated. Season with salt and pepper to taste (3-4 minutes).
  5. Slice each mini croissant horizontally, leaving a hinge if desired. Lightly toast for extra crunch if preferred (about 3 minutes).
  6. Spoon generous amounts of chicken salad onto the bottom halves of each croissant. Close the tops gently. Arrange on a platter or baking sheet, cover with plastic wrap, and refrigerate for at least 15 minutes to let flavors meld.
  7. Serve chilled or at room temperature just before guests arrive.
