  • 2 to 3 pounds baby back ribs or spare ribs, trimmed of excess fat
  • 2 tablespoons brown sugar
  • 1 tablespoon smoked paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon chili powder (optional)
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 cup BBQ sauce (e.g., Stubb’s Original)
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon apple cider vinegar
  • Aluminum foil for wrapping ribs

Instructions

  1. Preheat your oven to 275°F (135°C).
  2. Remove the silver skin membrane from the back of the ribs by sliding a knife under it and pulling it off with a paper towel for grip.
  3. Mix brown sugar, smoked paprika, garlic powder, onion powder, chili powder, salt, and black pepper in a small bowl to make the dry rub. Rub evenly all over both sides of the ribs.
  4. Wrap the ribs tightly in aluminum foil, meat-side up, sealing edges completely to lock in moisture. Double wrap if foil is thin.
  5. Place the foil-wrapped ribs on a rimmed baking sheet and bake for 2 to 2.5 hours until the meat is tender and pulls away easily from the bone. Check at 2 hours and add more time if needed.
  6. While ribs bake, mix BBQ sauce with honey (or maple syrup) and apple cider vinegar to prepare the glaze.
  7. Remove ribs from oven and carefully unwrap foil. Brush ribs generously with the BBQ glaze and return to the oven, uncovered, under the broiler for 5-7 minutes to caramelize the sauce. Watch closely to prevent burning.
  8. Let ribs rest for 5 minutes before slicing between the bones to allow juices to redistribute.
