Instructions

  1. Preheat your oven to 325ยฐF (163ยฐC). Line a 9×9-inch pan with parchment paper, leaving some overhang for easy lifting.
  2. In a medium bowl, combine graham cracker crumbs, melted butter, and sugar. Stir until mixture resembles wet sand.
  3. Press the crust mixture firmly and evenly into the bottom of the prepared pan.
  4. Bake the crust for 10 minutes, then remove and let cool slightly.
  5. In a large bowl, beat softened cream cheese with sugar using an electric mixer until smooth and creamy (2-3 minutes).
  6. Add eggs one at a time, mixing well after each addition. Mix in vanilla extract and flour until just combined.
  7. Fold in sour cream gently, being careful not to overmix.
  8. Pour cheesecake batter over the warm crust and spread evenly.
  9. Bake for 35-40 minutes until edges are set and lightly golden but center still jiggles slightly.
  10. Remove from oven and cool completely on a wire rack (about 1 hour). Refrigerate for at least 3 hours or overnight.
  11. Top with fresh strawberries and blueberries just before serving. Optionally dust with powdered sugar.
