  • 1 teaspoon vanilla extract
  • 2 tablespoons sour cream
  • 1/2 cup fresh blueberries
  • 1/2 cup fresh strawberries, sliced
  • 1/2 cup fresh raspberries
  • Optional: a small sprig of fresh mint for garnish

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a medium bowl, mix graham cracker crumbs, melted butter, and sugar until the mixture resembles wet sand.
  3. Spoon about 1 tablespoon (15 g) of the crust mixture into each mini muffin cup. Press down firmly to create an even layer.
  4. Bake the crusts for 5 minutes, then remove and let cool slightly.
  5. In a large bowl, beat the softened cream cheese until smooth (about 2 minutes). Add sugar and continue beating until well combined.
  6. Add the egg and vanilla extract, mixing until smooth.
  7. Fold in the sour cream gently with a spatula to keep the texture creamy and light.
  8. Spoon about 2 tablespoons (30 ml) of the cheesecake filling over each crust in the muffin pan, smoothing the tops. Fill cups about 3/4 full.
  9. Bake for 18–22 minutes until centers are slightly jiggly but not liquid. Cover loosely with foil if edges brown too fast.
  10. Remove from oven and let cool in the pan for 15 minutes, then transfer to a wire rack to cool to room temperature.
  11. Refrigerate for at least 2 hours or overnight to firm up and develop flavor.
  12. Arrange blueberries in the top left corner of each mini cheesecake to mimic stars on a flag.
  13. Alternate rows of sliced strawberries and raspberries horizontally for the stripes.
  14. Optionally garnish with a small mint leaf and serve chilled.
