Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish lightly with butter or non-stick spray.
  2. Peel the peaches by blanching them in boiling water for 30 seconds, then plunging into ice water to loosen skins. Slice peaches into roughly 1/2-inch thick slices.
  3. Toss sliced peaches in a bowl with granulated sugar, brown sugar, lemon juice, cornstarch, and cinnamon. Stir gently to coat evenly.
  4. In another bowl, combine oats, flour, brown sugar (reserve 1 tablespoon from peach mixture sugars if extra sweetness is desired), and salt.
  5. Add cold diced butter and vanilla extract to the dry ingredients. Use a pastry cutter or fingers to blend until mixture is crumbly with pea-sized butter pieces.
  6. Pour the peach mixture into the prepared baking dish and spread evenly.
  7. Sprinkle the oatmeal streusel topping evenly over the peaches without pressing down.
  8. Bake for 40 to 45 minutes until the topping is golden brown and crunchy and peach juices are bubbling around the edges. Tent with foil if topping browns too quickly.
