Ingredients

Scale
  • 1/2 cup (113g) unsalted butter, melted
  • 1 cup (200g) granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1/3 cup (40g) unsweetened cocoa powder
  • 1/2 cup (65g) all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 4 oz (113g) cream cheese, softened
  • 1/4 cup (50g) granulated sugar
  • 1 large egg yolk
  • 1/2 cup (120g) pumpkin puree
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving overhang on two sides.
  2. In a large bowl, whisk together melted butter and 1 cup sugar until combined. Add eggs and 1 teaspoon vanilla, whisk vigorously for 1 minute until smooth and slightly lighter.
  3. In a separate bowl, sift together cocoa powder, flour, salt, and baking powder. Gradually fold dry ingredients into wet ingredients until just combined. Do not overmix.
  4. In a medium bowl, beat softened cream cheese with 1/4 cup sugar until smooth. Add egg yolk, pumpkin puree, cinnamon, nutmeg, and 1/4 teaspoon vanilla. Beat until silky.
  5. Pour brownie batter into prepared pan and spread evenly. Drop spoonfuls of pumpkin cheesecake mixture on top. Gently swirl with a butter knife or skewer, creating ribbons.
  6. Bake for 25-30 minutes, until edges are set and a toothpick inserted in center comes out with moist crumbs. Cool completely in pan on a wire rack.
  7. Use parchment overhang to lift brownies out. Slice into 9 or 16 squares.

Notes

For clean slices, cool completely and use a sharp knife run under hot water between cuts. Brownies can be stored at room temperature for up to 3 days or frozen for up to 3 months. For a gluten-free version, use a 1:1 gluten-free flour blend. For dairy-free, use dairy-free butter and cream cheese.
