Easy Sausage and Peppers Stuffed Sheet-Pan Sandwiches

A quick and easy weeknight dinner where sausage, peppers, and hoagie rolls are all roasted together on one sheet pan for a delicious, minimal-cleanup meal. This forgiving recipe turns a happy accident into a crowd-pleasing comfort food classic.

  • 1 ½ lbs (680g) sweet or hot Italian sausage links
  • 3 large bell peppers (mix of red, yellow, orange), sliced into ½-inch strips
  • 1 large yellow onion, sliced into ½-inch half-moons
  • 4 cloves garlic, thinly sliced
  • 3 tablespoons olive oil
  • 1 teaspoon dried oregano
  • ½ teaspoon red pepper flakes (optional)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 4 hearty hoagie or sub rolls (68 inches long)
  • 2 tablespoons unsalted butter, melted
  • 1 tablespoon grated Parmesan cheese
  • Optional: Sliced provolone or mozzarella cheese

Instructions

  1. Preheat oven to 425°F (220°C). Line a large rimmed baking sheet with aluminum foil or parchment paper.
  2. In a mixing bowl, combine sliced bell peppers, onion, and garlic. Drizzle with olive oil and sprinkle with oregano, red pepper flakes (if using), salt, and black pepper. Toss to coat evenly.
  3. Spread the seasoned peppers and onions in a single layer on the prepared baking sheet. Nestle the Italian sausage links into the vegetables.
  4. Roast for 20 minutes. Remove from oven, flip sausages, and stir peppers.
  5. Brush the tops of hoagie rolls with melted butter and sprinkle with Parmesan cheese. If using cheese slices, lay them on the bottom half of the rolls.
  6. Nestle the prepared rolls, buttered side up, on top of the sausage and peppers on the sheet pan. Return to oven and roast for another 10-12 minutes, until rolls are golden and sausages are cooked through (internal temperature 160°F / 71°C).
  7. Remove from oven and let rest for 2-3 minutes. Carefully remove hot rolls, split them open, and fill with roasted peppers, onions, and a sausage link. Serve immediately.

Notes

For best results, use a rimmed baking sheet to catch juices. Don’t crowd the pan to ensure proper roasting. The bread is best served immediately to avoid sogginess. Leftover sausage and peppers can be stored separately and reheated. For a vegetarian option, replace sausage with portobello mushrooms or plant-based sausage.
