Ingredients

Scale
  • 1 (4-5 pound) boneless or bone-in ham (fully cooked, spiral-cut preferred)
  • 1/2 cup honey
  • 1/4 cup soy sauce (low-sodium preferred)
  • 1/4 cup brown sugar (packed; light or dark)
  • 4 cloves garlic (minced)
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon ground ginger (optional)
  • 1/4 teaspoon black pepper (freshly ground)
  • 2 tablespoons cornstarch (mixed with 2 tablespoons cold water for slurry)

Instructions

  1. Prep the ham: Remove the ham from its packaging and pat it dry with paper towels. If your ham has a thick layer of fat, score it in a diamond pattern with a sharp knife. Place the ham in the slow cooker, flat side down.
  2. Make the glaze: In a small bowl, whisk together the honey, soy sauce, brown sugar, minced garlic, apple cider vinegar, Dijon mustard, ground ginger, and black pepper. Taste and adjust honey or soy sauce to your liking.
  3. Pour and coat: Pour the glaze evenly over the ham, making sure it gets into the scored lines and around the sides. Use a brush or your hands to rub it in.
  4. Cook low and slow: Cover the slow cooker and cook on LOW for 4-6 hours, or on HIGH for 2-3 hours. For a bone-in ham, lean toward the longer time. The ham is done when the internal temperature reaches 140°F and it is tender. Baste with juices halfway through if possible.
  5. Thicken the glaze: About 30 minutes before serving, carefully remove the ham from the slow cooker and place it on a cutting board. Tent it loosely with foil. Pour the remaining juices into a small saucepan. Whisk in the cornstarch slurry and bring to a simmer over medium heat. Cook for 2-3 minutes, stirring constantly, until the glaze thickens to a syrupy consistency.
  6. Glaze and serve: Brush the thickened glaze all over the ham. Slice and serve with the extra glaze on the side.

Notes

Don’t skip scoring the ham; it helps the glaze penetrate. Use a meat thermometer to avoid overcooking (140°F for fully cooked ham). Let the ham rest for 10-15 minutes before slicing. For extra glaze, make a double batch and reserve half for serving. If using a frozen ham, thaw completely in the refrigerator before cooking.
