Easy Sparkling Apple Cider Mimosa: A 5-Minute Fall Cocktail

A quick and easy fall cocktail made with sparkling apple cider and champagne, perfect for last-minute gatherings. This 5-minute recipe delivers a crisp, balanced mimosa that’s a crowd-pleaser.

  • 2 cups (470 ml) sparkling apple cider, chilled
  • 1 cup (235 ml) champagne or prosecco, chilled (dry brut recommended)
  • Apple slices (Honeycrisp, Fuji, or Granny Smith), for garnish
  • Cinnamon sticks, optional, for garnish
  • Fresh rosemary sprigs, optional, for garnish

Instructions

  1. Chill the sparkling apple cider and champagne in the refrigerator for at least 2 hours before serving.
  2. Prepare garnishes: wash apples and rosemary, slice apples thinly (about 1/8 inch thick). Set aside with cinnamon sticks.
  3. For each glass, pour about 2/3 cup (160 ml) of chilled sparkling apple cider, filling the glass about two-thirds full.
  4. Slowly pour about 1/3 cup (80 ml) of chilled champagne into each glass, pouring gently down the side to preserve bubbles.
  5. Add garnishes: drop an apple slice into each glass, add a cinnamon stick if using, and tuck a rosemary sprig alongside.
  6. Serve immediately within 5 minutes of pouring for best fizz and temperature.

Notes

For best results, use a dry brut champagne to balance the sweetness of the cider. Do not add ice cubes as they will dilute the drink. For a non-alcoholic version, substitute champagne with non-alcoholic sparkling wine or ginger ale. To prevent apple slices from browning, soak them in cold water with a squeeze of lemon juice for 5 minutes before using.
