A refreshing, no-cook salad made with crisp cucumbers, juicy cherry tomatoes, salty feta, and fresh dill. Ready in 10 minutes, it’s the perfect side dish for summer gatherings or a light meal on a hot day.

Ingredients

Scale
  • 2 large English cucumbers (or 3 medium, peeled and seeded if using regular)
  • 2 cups cherry tomatoes, halved
  • 8 ounces feta cheese, crumbled
  • ¼ cup fresh dill, chopped
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon fresh lemon juice
  • ½ teaspoon salt (or to taste)
  • ¼ teaspoon freshly ground black pepper
  • ½ small red onion, thinly sliced (optional)
  • ¼ cup Kalamata olives, pitted and halved (optional)

Instructions

  1. Prep the cucumbers: If using English cucumbers, wash and slice into ¼-inch half-moons. If using regular cucumbers, peel, slice lengthwise, scoop out seeds, then slice. Place in a large mixing bowl.
  2. Halve the tomatoes: Wash and dry cherry tomatoes, cut each in half (or quarters if large). Add to the bowl with cucumbers.
  3. Slice the onion: If using red onion, slice as thinly as possible. For milder flavor, soak slices in cold water for 10 minutes. Add to the bowl.
  4. Make the dressing: In a small bowl or mason jar, combine olive oil, red wine vinegar, lemon juice, salt, and pepper. Whisk or shake until emulsified.
  5. Combine everything: Pour dressing over vegetables and toss gently. Add crumbled feta, fresh dill, and olives (if using). Toss again gently.
  6. Let it rest: Allow salad to sit at room temperature for 5-10 minutes before serving to meld flavors.
  7. Taste and adjust: Add more salt, pepper, or lemon juice if needed. Serve immediately.

Notes

For best texture, combine ingredients no more than an hour before serving. Salt goes into the dressing, not directly on cucumbers, to prevent excess water. Fresh dill is non-negotiable; dried dill won’t provide the same bright flavor. If making ahead, prep ingredients separately and combine just before serving.
