This Wholesome Game Day Veggie & Hummus Platter is a quick, easy, and crowd-pleasing snack that came together from a happy kitchen mistake. It’s packed with crunchy fresh vegetables, creamy hummus, and savory accents, perfect for game day or any gathering.

Ingredients

  • 1.5 cups (360 ml) hummus (classic smooth or roasted red pepper)
  • 2 large carrots, peeled and cut into sticks
  • 3 ribs celery, cut into 3-inch sticks
  • 1 red bell pepper, sliced into strips
  • 1 yellow bell pepper, sliced into strips
  • 1 large cucumber, cut into spears or rounds
  • 1 cup (150 g) cherry tomatoes, halved
  • 1 cup (100 g) sugar snap peas
  • 1 cup (100 g) cauliflower, cut into small florets
  • 1/2 cup (75 g) feta cheese, crumbled
  • 1/2 cup (80 g) Kalamata olives
  • 1/2 cup (100 g) marinated artichoke hearts, drained and halved
  • 1/2 cup (100 g) roasted red peppers, sliced
  • Pita bread or pita chips (optional, for serving)
  • Fresh herbs (optional, for garnish)

Instructions

  1. Wash and dry all produce thoroughly.
  2. Transfer hummus to a small bowl or ramekin; let sit at room temperature for 10 minutes, then stir. If too thick, whisk in 1 tablespoon olive oil or lemon juice.
  3. Peel carrots and cut into 3-inch by 1/2-inch sticks. Cut celery into 3-inch sticks. Slice bell peppers into 1-inch wide strips. Quarter cucumber lengthwise, then cut into spears.
  4. Halve cherry tomatoes. Snap ends off sugar snap peas if tough. Cut cauliflower into small bite-sized florets. Drain and halve artichoke hearts. Drain and slice roasted red peppers.
  5. Place hummus bowl in center of a large serving board. Arrange veggies in groups around it, creating color pockets (e.g., carrots in one corner, cucumber and snap peas in another, peppers and tomatoes in a third, cauliflower in the fourth).
  6. Place crumbled feta in a small ramekin or pile on board near hummus. Add Kalamata olives and artichoke hearts in small clusters. Scatter roasted red pepper strips. Garnish with fresh herbs if desired.
  7. Serve immediately, or refrigerate for up to 2 hours before serving.

Notes

Prep all veggies up to 24 hours in advance and store separately. Assemble no more than 2 hours before serving. For extra crunch, soak limp veggies in ice water for 10 minutes before cutting. To make hummus look fancy, create a well in the center, drizzle with olive oil, and sprinkle with paprika or za’atar.
