  • 1 cup (200g) granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract

  • 1/2 cup (65g) all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/2 cup fresh blueberries
  • 1/2 cup fresh raspberries or sliced strawberries
  • 1/3 cup white chocolate chips or chunks
  • Assorted red, white, and blue sprinkles (optional)
  • Powdered sugar (optional dusting)

Instructions

  1. Preheat the oven to 350°F (175°C). Lightly grease your mini muffin pan or line with mini cupcake liners.
  2. Melt the butter in a microwave-safe bowl or over low heat on the stove. Let it cool for a minute.
  3. In a large mixing bowl, whisk together the sugar and eggs until glossy and well combined, about 1-2 minutes. Add the vanilla extract and melted butter, mixing gently.
  4. Sift in the cocoa powder, flour, salt, and baking powder. Fold the dry ingredients into the wet mixture carefully without overmixing.
  5. Spoon the batter evenly into the prepared mini muffin pan, filling each cup about 3/4 full.
  6. Bake for 12-15 minutes. Check at 12 minutes by inserting a toothpick; it should come out with a few moist crumbs but not wet batter.
  7. Remove from oven and cool in the pan for 10 minutes, then transfer to a cooling rack to cool completely.
  8. Melt the white chocolate gently in short bursts in the microwave or over a double boiler, stirring often until smooth.
  9. Drizzle the white chocolate over the cooled brownie bites using a spoon or piping bag. Quickly top with fresh blueberries, raspberries or sliced strawberries, and sprinkle with red, white, and blue sprinkles before the chocolate sets.
  10. Let the toppings set for about 15 minutes at room temperature, or refrigerate to speed up.

Do not overmix the batter to keep brownies fudgy. Use room temperature eggs for better texture. Watch baking time closely to avoid drying out.
