  • 2 tablespoons (28g) unsalted butter, melted
  • ½ teaspoon ground cinnamon (optional)
  • ½ teaspoon vanilla extract
  • 1 tablespoon fresh lime juice
  • Pinch of salt

Instructions

  1. Peel the pineapple with a sharp knife, removing the skin and eyes. Cut into ½-inch thick rings or spears, keeping slices uniform for even cooking. (About 10 minutes)
  2. In a small mixing bowl, combine brown sugar, melted butter, ground cinnamon, vanilla extract, lime juice, and salt. Stir until smooth and brushable. (3 minutes)
  3. Preheat grill or grill pan to medium-high heat (375-400°F). If using a grill pan, heat on stovetop for about 5 minutes.
  4. Brush one side of each pineapple slice generously with the brown sugar glaze. Place glaze-side down on the grill and cook for 3-4 minutes until caramelized and grill marks appear.
  5. Brush the other side with glaze, flip the pineapple, and grill for another 3-4 minutes until tender but still holding shape with a sticky crust. (8-10 minutes total grilling)
  6. Transfer grilled pineapple to a serving platter. Optionally drizzle warmed remaining glaze over the top. Serve warm or at room temperature.

Use ripe pineapple for best caramelization and sweetness. Apply glaze right before grilling each side to prevent burning. Use tongs to flip pineapple to avoid breaking slices.
