  • 3 tablespoons (42g) unsalted butter, melted and slightly cooled
  • 1 teaspoon vanilla extract
  • 1 cup (150g) fresh blueberries, washed and patted dry
  • ½ cup (125g) ricotta cheese, preferably whole milk ricotta
  • 2 tablespoons (16g) powdered sugar, sifted
  • 1 teaspoon fresh lemon zest (from 1 small lemon)
  • 1 tablespoon fresh lemon juice
  • ½ teaspoon vanilla extract

Instructions

  1. In a large bowl, whisk together flour, baking powder, sugar, and salt.
  2. In a separate bowl, beat eggs with milk and vanilla extract. Slowly whisk in melted butter.
  3. Pour wet ingredients into dry ingredients and stir gently until combined, leaving some lumps. Fold in blueberries carefully.
  4. In a small bowl, whisk ricotta, powdered sugar, lemon zest, lemon juice, and vanilla extract until smooth and airy. Refrigerate until serving.
  5. Heat a skillet or griddle over medium heat and lightly grease with butter or oil.
  6. Pour ¼ cup batter for each pancake. Cook until bubbles form on the surface (2-3 minutes), then flip and cook another 1-2 minutes until golden brown.
  7. Stack pancakes on plates, top with lemony ricotta cream and extra blueberries if desired. Drizzle with honey or maple syrup if preferred.
