A quick and easy fresh heirloom tomato bruschetta with garlic toast recipe that delivers a perfect balance of sweet, tangy tomatoes and crunchy garlic bread, ideal for a light snack or appetizer.

Ingredients

Scale
  • 4 cups (600g) ripe heirloom tomatoes, chopped (mix of red, yellow, and orange)
  • 1/4 cup (6g) fresh basil, roughly torn
  • 2 cloves garlic, minced (for tomato mixture)
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • Salt to taste
  • Freshly ground black pepper to taste
  • 1 loaf baguette or rustic Italian bread, sliced 1/2-inch thick
  • 23 whole garlic cloves (for rubbing on toast)
  • Optional: pinch of red pepper flakes

Instructions

  1. Prepare the Tomato Mixture (10 minutes): Place the chopped heirloom tomatoes in a medium bowl. Add the minced garlic, torn basil leaves, olive oil, balsamic vinegar, salt, and pepper. Stir gently to combine, preserving the tomato chunks. Let it sit at room temperature while you prepare the toast.
  2. Slice the Bread (5 minutes): Using a serrated knife, cut the baguette into 1/2-inch thick slices. Let the slices rest for a few minutes if the bread is very fresh and soft.
  3. Toast the Bread (5-7 minutes): Heat a grill pan or skillet over medium heat. Arrange the bread slices in a single layer and toast until golden and crisp, about 2-3 minutes per side. Alternatively, toast under a broiler watching carefully to prevent burning.
  4. Rub the Toast with Garlic (2 minutes): Immediately after toasting, while the bread is still warm, gently rub the cut side of a whole garlic clove over each slice. Optionally brush olive oil on the bread before rubbing for a stronger garlic flavor.
  5. Assemble the Bruschetta (3 minutes): Spoon the tomato mixture generously over each garlic-rubbed toast slice. Let any extra juice drizzle over the edges and serve immediately.

Notes

Choose ripe but firm heirloom tomatoes to avoid soggy bruschetta. Stir tomato mixture gently to keep chunks intact. Toast bread to medium crispness for best texture. Rub garlic on warm toast immediately after toasting for best flavor. Assemble just before serving to keep toast crunchy. If tomato mixture is too watery, drain excess liquid but save it for salads or pasta.
