  • 1 medium cucumber, peeled and thinly sliced (about 8 ounces or 225 grams)
  • Juice of 2 medium limes (about 3 tablespoons or 45 ml)
  • 1012 fresh mint leaves, gently bruised
  • 4 cups (32 fl oz or 960 ml) chilled sparkling water
  • 12 tablespoons erythritol or monk fruit sweetener (adjust to taste)
  • Ice cubes as needed
  • Optional: small pinch of sea salt

Instructions

  1. Peel and thinly slice 1 medium cucumber.
  2. Squeeze the juice of 2 medium limes; strain if desired.
  3. Place 10-12 fresh mint leaves in a large pitcher and gently bruise with a muddler or the back of a wooden spoon to release oils.
  4. Stir in 1-2 tablespoons erythritol or monk fruit sweetener, starting with less and adjusting to taste.
  5. Add the sliced cucumber and lime juice to the pitcher.
  6. Pour in 4 cups (32 fl oz) of chilled sparkling water and gently stir to combine without losing fizz.
  7. Refrigerate the mixture for at least 30 minutes to allow flavors to meld.
  8. Serve over ice cubes, garnished with extra mint leaves or a lime wedge if desired.

Notes

Use fresh, firm cucumbers and vibrant mint leaves for best flavor. Avoid over-muddling mint to prevent bitterness. Chill the mixture for at least 30 minutes but not too long to avoid overpowering mint flavor. Add sparkling water just before serving to keep fizz lively. Sweetener can be pre-dissolved in warm water if needed. Experiment with variations like berries, basil, jalapeño, or alcoholic additions for different twists.
