Ingredients

  • Fresh strawberries, hulled and halved
  • Fresh blueberries, washed and dried
  • Fresh mozzarella balls (bocconcini), drained
  • Cheddar cheese cubes, sharp or mild (optional)
  • Fresh basil leaves, small and whole
  • Honey, 2 tablespoons (30 ml)
  • Freshly squeezed lime juice, 1 tablespoon (15 ml)
  • Wooden skewers, about 6 inches long (soaked in water for 20 minutes if grilling)

Instructions

  1. Prepare the Ingredients (10 minutes): Rinse the strawberries and blueberries under cold water and gently pat dry with a clean towel. Hull the strawberries and cut each into halves or quarters, depending on size. Drain the mozzarella balls and pat them dry to avoid excess moisture on the skewers.
  2. Mix the Honey-Lime Drizzle (5 minutes): In a small bowl, whisk together 2 tablespoons (30 ml) of honey and 1 tablespoon (15 ml) of freshly squeezed lime juice. Taste and adjust to your preference—more lime for tang, more honey for sweetness.
  3. Assemble the Skewers (10 minutes): Starting with a strawberry piece, thread onto the skewer, followed by a basil leaf, a mozzarella ball, and then a few blueberries. Repeat the pattern until the skewer is full, usually about 4-5 pieces per skewer. If using cheddar cubes for variety, alternate with mozzarella for texture contrast.
  4. Drizzle and Serve: Arrange the finished skewers on a platter and lightly brush or drizzle the honey-lime mixture over them. Optionally, sprinkle a pinch of flaky sea salt to highlight the flavors. Serve immediately or refrigerate for up to 2 hours before serving.

Notes

Soak wooden skewers in water for 20 minutes if you plan to grill to prevent burning. Add honey-lime drizzle just before serving to avoid sogginess.
