Instructions

  1. Wash and dice about 2 cups of heirloom tomatoes into small, uniform pieces. Place in a medium mixing bowl.
  2. Rinse fresh basil leaves, pat dry, and roughly chop about 1/4 cup. Add to the tomatoes.
  3. Mince 2 cloves of garlic finely. Drizzle 2 tablespoons of extra virgin olive oil over the tomato and basil mixture, then add the garlic. Stir gently to combine.
  4. Add sea salt and freshly ground black pepper to taste. Let the mixture rest for 5-10 minutes at room temperature to let flavors meld.
  5. Slice the baguette or rustic bread into 1/2-inch thick pieces. Toast the slices until golden and crisp, about 2-3 minutes per side on a grill pan or under a broiler.
  6. Spoon the tomato mixture generously onto each toasted slice. Drizzle a little extra olive oil on top if desired.
  7. Serve immediately before the bread softens.

If tomatoes are very watery, drain excess juice before mixing to avoid soggy bread. Toast bread slices evenly and serve immediately after assembling to maintain crunch.
