A quick and refreshing vegan summer treat featuring watermelon rounds topped with creamy coconut yogurt, fresh berries, kiwi, and mint leaves. Perfect for light indulgence on hot days without any cooking required.

  • 1 medium seedless watermelon, cut into 1-inch thick rounds
  • 1 cup full-fat unsweetened coconut yogurt
  • 1/2 cup mixed berries (strawberries, blueberries, raspberries), fresh or thawed if frozen
  • 12 kiwis, peeled and sliced thinly
  • A handful of fresh mint leaves, torn
  • 1 tablespoon chia seeds (optional)
  • 1 teaspoon freshly grated lemon zest
  • 12 teaspoons maple syrup or agave (optional)

Instructions

  1. Rinse the watermelon and dry it with a kitchen towel. Cut off the ends to create a flat surface, then slice the watermelon crosswise into 1-inch thick rounds. Choose the center slices that are round and even for your pizza base.
  2. Carefully cut around the rind of each watermelon round, leaving just the juicy red flesh while keeping the round shape intact.
  3. Place a watermelon round on a serving platter. Spoon about 1/4 cup of coconut yogurt onto the watermelon and gently spread it evenly, leaving a small border around the edge.
  4. Arrange fresh berries, kiwi slices, and torn mint leaves over the yogurt layer. Sprinkle chia seeds on top if using.
  5. Lightly zest fresh lemon over the toppings. Drizzle 1-2 teaspoons of maple syrup or agave over the pizza if desired for extra sweetness.
  6. Serve immediately for best texture and flavor, ideally within 15 minutes of assembly.

Notes

Use ripe but firm watermelon to avoid soggy slices. Let coconut yogurt sit at room temperature for a few minutes before spreading to soften. Assemble just before serving to maintain freshness and prevent sogginess. Optional toppings like nuts or different herbs can be added for variation.
