  • 1 cup (120g) chopped fresh rhubarb stalks (or frozen, thawed and drained)
  • 1 ripe banana, peeled and sliced
  • 1/2 cup (120g) plain Greek yogurt (or dairy-free yogurt alternative)
  • 2 tablespoons chia seeds
  • 1 tablespoon honey or maple syrup (optional)
  • 1/2 cup (120ml) unsweetened almond milk (or any milk of choice)
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon fresh lemon juice
  • Fresh berries or sliced fruit for topping (optional)

Instructions

  1. Chop 1 cup (120g) rhubarb stalks into 1-inch pieces. Place them in a medium saucepan with 2 tablespoons water. Cook over medium heat for about 5 minutes, stirring occasionally, until the rhubarb softens but doesn’t completely break down.
  2. Remove from heat and let the rhubarb cool for 5 minutes to prevent yogurt from curdling when blended.
  3. Add the cooked rhubarb, banana, Greek yogurt, almond milk, honey or maple syrup (if using), vanilla extract, and lemon juice to a high-speed blender. Blend until creamy and smooth, about 30-45 seconds.
  4. Transfer the smoothie to a bowl and gently stir in the chia seeds. Let it sit for 5 minutes so the chia seeds swell slightly, adding texture.
  5. Pour the smoothie mixture into serving bowls. Top with fresh berries, sliced fruit, or extra chia seeds or nuts for crunch and color.
  6. Serve immediately for best flavor and texture. For prep ahead, refrigerate the smoothie base and add chia seeds and toppings just before serving.

Notes

Cook rhubarb gently to soften tartness without losing brightness. Let chia seeds swell after stirring in for best texture. Adjust sweetness with honey or maple syrup based on banana ripeness. If smoothie is too thick, add a splash more almond milk. For vegan version, use plant-based yogurt and maple syrup.
