This homemade Baileys Irish cream recipe is a silky, warming, and indulgent recreation of a beloved pub drink. It’s richer, fresher, and better than store-bought, and can be whipped up in about five minutes flat.

Ingredients

Scale
  • 1 ½ cups Irish whiskey (preferably Jameson)
  • 1 can (14 ounces) sweetened condensed milk
  • 1 ¼ cups heavy cream
  • 2 tablespoons chocolate syrup
  • 1 teaspoon instant coffee granules, dissolved in 1 tablespoon hot water
  • 1 teaspoon vanilla extract
  • ½ teaspoon almond extract
  • ¼ cup unsweetened cocoa powder (optional)

Instructions

  1. Dissolve the coffee granules in 1 tablespoon of hot water. Stir until completely dissolved and set aside to cool slightly.
  2. Add all ingredients to the blender in this order: sweetened condensed milk, heavy cream, Irish whiskey, chocolate syrup, vanilla extract, almond extract, cocoa powder (if using), and the dissolved coffee mixture.
  3. Blend on low speed for about 20 seconds. Do not over-blend to avoid incorporating air bubbles.
  4. Scrape down the sides of the blender with a spatula. Blend for another 10 seconds on low until uniformly dark and creamy.
  5. Taste test and adjust if needed. Add a tiny pinch of salt to balance sweetness.
  6. Pour through a fine-mesh strainer into bottles or jars using a funnel.
  7. Seal tightly and refrigerate. Let rest for at least 2 hours before serving. For best flavor, make it the day before.

Notes

All ingredients should be at room temperature before blending for best emulsification. Do not over-blend; 20-30 seconds total is sufficient. The mixture will thicken as it chills. For best flavor, let it rest overnight. Shake well before serving as some separation is natural. Store in the refrigerator for up to 2 months.
