Homemade Iced Pumpkin Cream Cold Brew Recipe

A quick and easy homemade version of the popular coffee shop pumpkin cream cold brew, made with simple ingredients and a secret cream cheese trick for a perfectly stable, cloud-like topping.

  • 1 cup cold brew concentrate (store-bought or homemade)
  • 1 cup cold water (or milk of your choice)
  • Ice cubes
  • 2 tablespoons pumpkin puree (100% pure pumpkin)
  • 1 tablespoon cream cheese, softened
  • 2 tablespoons heavy cream (or full-fat coconut cream for dairy-free)
  • 1 tablespoon maple syrup (or brown sugar)
  • 1/4 teaspoon pumpkin pie spice (plus extra for garnish)
  • 1/4 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. In a small mixing bowl, combine the softened cream cheese and pumpkin puree. Mash together with a fork until smooth and well-combined.
  2. Add the heavy cream, maple syrup, vanilla extract, pumpkin pie spice, and a pinch of salt. Whisk until completely smooth (about 20-30 seconds with a hand frother). The mixture should be thick but pourable.
  3. Chill the pumpkin cream in the fridge for 5-10 minutes while preparing the cold brew.
  4. Fill a tall glass with ice cubes.
  5. Mix the cold brew concentrate with cold water (or milk) and pour over the ice, leaving about 2 inches of space at the top.
  6. Slowly pour the chilled pumpkin cream over the back of a spoon held just above the cold brew to create a distinct layer on top.
  7. Sprinkle a tiny pinch of pumpkin pie spice on top for garnish. Serve immediately with a straw or spoon.

Notes

The cream cheese is the secret to a stable pumpkin cream that floats on top. Make sure all ingredients are cold for best layering. For dairy-free, use full-fat coconut cream and dairy-free cream cheese alternative.
