A light and crunchy popcorn snack coated with pumpkin puree and warm fall spices, perfect for Halloween parties or autumn gatherings. This easy, 20-minute recipe is naturally vegan, gluten-free, and dairy-free.

Ingredients

Scale
  • 8 cups air-popped popcorn (about 1/2 cup unpopped kernels)
  • 2 tablespoons coconut oil, melted
  • 3 tablespoons pumpkin puree
  • 1 tablespoon coconut sugar (or brown sugar)
  • 1 1/2 teaspoons pumpkin pie spice
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg, freshly grated if possible
  • 1/4 teaspoon salt
  • 1/4 cup raw pumpkin seeds (pepitas) (optional)
  • 2 tablespoons dried cranberries or chopped dried apples (optional)
  • 1/4 cup white chocolate chips, melted for drizzling (optional)

Instructions

  1. Preheat your oven to 300°F (150°C). Line a large baking sheet with parchment paper or a silicone baking mat.
  2. In a small bowl, whisk together the melted coconut oil and pumpkin puree until smooth.
  3. In another small bowl, mix the coconut sugar, pumpkin pie spice, cinnamon, nutmeg, and salt.
  4. Place the popcorn in a large mixing bowl. Pour the pumpkin-coconut oil mixture over the popcorn and toss gently with a spatula or your hands until every piece is lightly coated.
  5. Sprinkle the spice blend over the popcorn in three batches, tossing between each addition, until evenly distributed.
  6. Spread the seasoned popcorn in a single layer on the prepared baking sheet. If adding pumpkin seeds, scatter them over the top now.
  7. Bake for 10 minutes, stirring halfway through. The popcorn should look slightly darker and feel dry to the touch when done.
  8. Let the popcorn cool completely on the baking sheet for at least 15-20 minutes.
  9. Break up any large clusters and transfer to a serving bowl. If adding dried cranberries or white chocolate drizzle, do so after cooling.

Notes

For best results, use room temperature pumpkin puree to avoid clumping. Toast pumpkin seeds in a dry pan for 2-3 minutes before adding for extra crunch. Store in an airtight container at room temperature for up to 5 days. To revive crunch, reheat in a 300°F oven for 3-4 minutes and cool completely.
