This Light Apple Cider Mimosa with Cinnamon Rim is a quick, 3-ingredient fall cocktail that comes together in under 5 minutes. It’s the perfect festive drink for brunches, parties, or cozy mornings, featuring a warm cinnamon-sugar rim that makes every sip feel special.

Ingredients

Scale
  • 1 cup (240 ml) apple cider, chilled
  • 1 cup (240 ml) prosecco or dry sparkling wine, chilled
  • Ice (optional)
  • 1 tablespoon ground cinnamon
  • 2 tablespoons granulated sugar
  • 1 tablespoon honey or maple syrup
  • Apple slices (for garnish, optional)
  • Cinnamon sticks (for garnish, optional)
  • Fresh rosemary sprigs (for garnish, optional)

Instructions

  1. Prepare the cinnamon sugar mixture: In a small shallow dish, combine 1 tablespoon ground cinnamon and 2 tablespoons granulated sugar. Stir with a fork until evenly mixed.
  2. Rim the glasses: Pour 1 tablespoon honey or maple syrup onto a small plate. Dip the rim of each glass into the honey, rotating gently to coat the entire edge. Then dip the rim into the cinnamon sugar mixture, pressing lightly to adhere. Tap off any excess.
  3. Chill the glasses (optional): Place the rimmed glasses in the fridge for 5-10 minutes to help the rim set.
  4. Mix the mimosa base: In a pitcher or large measuring cup, combine 1 cup chilled apple cider and 1 cup chilled prosecco. Stir gently with a long spoon—do not shake.
  5. Pour into glasses: Carefully pour the mimosa mixture into the rimmed glasses, filling each about three-quarters full. If using ice, add it after pouring.
  6. Garnish and serve: Add a thin apple slice to the rim of each glass. Optionally, drop in a cinnamon stick or a small sprig of rosemary. Serve immediately.

Notes

Use dry prosecco to balance the sweetness of the apple cider. Rim glasses right before serving to prevent the rim from getting sticky. For a non-alcoholic version, substitute prosecco with sparkling apple cider or club soda. The cinnamon rim can be prepared ahead and stored in a jar.
