A lighter, healthier take on classic deviled eggs with smoky turkey bacon, fresh jalapeño, and a creamy Greek yogurt filling. Perfect for game day, brunch, or a high-protein snack.

Ingredients

Scale
  • 6 large eggs
  • 2 tablespoons plain Greek yogurt
  • 1 tablespoon mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon pickle juice
  • 1/4 teaspoon smoked paprika, plus more for garnish
  • Salt and black pepper, to taste
  • 3 strips turkey bacon
  • 1 fresh jalapeño, thinly sliced into rings
  • Fresh chives or cilantro, chopped (optional)

Instructions

  1. Hard-boil the eggs: Place eggs in a saucepan, cover with cold water by 1 inch. Bring to a rolling boil, then turn off heat, cover, and let sit for 10 minutes. Transfer to an ice bath for 5 minutes.
  2. Cook the turkey bacon: In a small skillet over medium heat, cook bacon 2-3 minutes per side until crispy. Drain on paper towels, then crumble.
  3. Peel the eggs: Tap to crack shells, roll between palms, and peel starting from the wider end. Rinse and pat dry.
  4. Slice and prep: Cut eggs in half lengthwise. Remove yolks to a bowl. Arrange whites on a platter.
  5. Make the filling: Mash yolks with Greek yogurt, mayonnaise, Dijon mustard, pickle juice, smoked paprika, salt, and pepper until smooth. Adjust seasoning.
  6. Fill the eggs: Transfer filling to a piping bag or zip-top bag. Snip corner and pipe into egg whites.
  7. Garnish: Top with crumbled bacon, jalapeño slices, smoked paprika, and optional chives or cilantro. Serve immediately or refrigerate.

Notes

For best texture, don’t overcook eggs. Peel under running water for stubborn shells. Toast paprika briefly in a dry pan for deeper flavor. Make ahead: boil eggs and cook bacon up to 2 days in advance; assemble just before serving to prevent soggy whites.
