These Lighter Cranberry Bliss Bars are a happy accident turned intentional—a chewy, tart, and sweet treat that feels indulgent but is made lighter with Greek yogurt and oat flour. Perfect for holiday gatherings or a cozy afternoon snack, they come together in one bowl with no mixer needed.

Ingredients

Scale
  • 3 tablespoons unsalted butter, melted and slightly cooled
  • ⅓ cup plain Greek yogurt (full-fat or 2%)
  • ½ cup light brown sugar, packed
  • ¼ cup granulated sugar
  • 1 large egg, at room temperature
  • 1 teaspoon vanilla extract
  • Zest of 1 medium orange
  • ¾ cup all-purpose flour
  • ¼ cup oat flour
  • ½ teaspoon baking powder
  • ¼ teaspoon fine sea salt
  • ¾ cup dried cranberries (unsweetened or reduced-sugar preferred)
  • ⅓ cup white chocolate chips (for drizzle)
  • ½ teaspoon coconut oil or vegetable oil (for drizzle)

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving overhang on two opposite sides.
  2. In a medium bowl, whisk together melted butter, Greek yogurt, brown sugar, and granulated sugar until smooth and glossy, about 30 seconds.
  3. Add the egg, vanilla extract, and orange zest. Whisk until fully incorporated and uniform.
  4. In a separate small bowl, whisk together all-purpose flour, oat flour, baking powder, and salt until no lumps remain.
  5. Pour dry ingredients into wet ingredients. Fold gently with a rubber spatula until just combined—do not overmix. A few lumps are fine.
  6. Fold in dried cranberries until evenly distributed. Batter will be thick and slightly sticky.
  7. Scrape batter into prepared pan. Use the back of a spatula or a slightly wet hand to press it evenly into the corners, about ½ to ¾ inch thick.
  8. Bake for 18 to 22 minutes, until edges are golden brown and set, and center looks slightly soft and puffed. A toothpick inserted in center should come out with a few moist crumbs, not wet batter.
  9. Cool bars in pan on a wire rack for at least 30 minutes. Then lift out using parchment overhang and cool completely on rack.
  10. Once bars are completely cool, make the drizzle: Place white chocolate chips and ½ teaspoon oil in a small microwave-safe bowl. Microwave in 20-second bursts, stirring well after each, until smooth and fully melted (about 40-60 seconds total).
  11. Drizzle melted white chocolate over cooled bars using a fork or small spoon in a zigzag pattern. Let set at room temperature for 20 minutes, or refrigerate for 10 minutes to speed up.
  12. Slice into 9 or 16 squares and serve.

Notes

Do not overmix the batter to avoid tough bars. Watch bake time closely—edges should be golden, center slightly soft. Use room temperature egg to prevent butter from seizing. For clean slices, chill bars 15-20 minutes before cutting. White chocolate drizzle can seize if overheated; add oil to stabilize. Bars keep in an airtight container at room temperature for up to 4 days, or freeze undrizzled for up to 3 months.
