Instructions

  1. Cook the sausage (5-7 minutes): Heat a large skillet over medium-high heat. Add the breakfast sausage and break it apart with a spatula. Cook until browned and cooked through, about 5-7 minutes. Transfer to a paper towel-lined plate and set aside. Leave about 1 tablespoon of rendered fat in the pan.
  2. Cook the hash browns (6-8 minutes): Add 1 tablespoon of butter to the same skillet over medium heat. Add the frozen hash browns in an even layer. Cook undisturbed for 3 minutes, then flip and cook for another 3-4 minutes until golden and heated through. Season with a pinch of salt and pepper. Transfer to a bowl and set aside.
  3. Whisk the eggs (2 minutes): In a medium mixing bowl, crack 12 large eggs. Add 1/4 cup milk, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Whisk vigorously for about 1 minute until uniform and slightly frothy.
  4. Scramble the eggs (4-5 minutes): Reduce heat to medium-low. Add the remaining 1 tablespoon of butter to the skillet and let it melt. Pour in the egg mixture. Let it sit for 30 seconds, then gently push the cooked eggs toward the center with a silicone spatula. Repeat until eggs are mostly set but still slightly wet (undercook slightly for best reheating results). Remove from heat immediately.
  5. Assemble the burritos (10-15 minutes): Lay a tortilla flat. Spoon about 1/3 cup of scrambled eggs down the center. Top with 2-3 tablespoons of cooked sausage, 2 tablespoons of hash browns, and a generous sprinkle of shredded cheddar cheese. Add optional vegetables if desired.

Notes
