Instructions

  1. Preheat your oven to 350ยฐF (175ยฐC). Grease a 9×5-inch loaf pan with butter or non-stick spray, then line it with parchment paper.
  2. Grate the zucchini using a box grater or food processor. Place the grated zucchini in a clean kitchen towel and gently squeeze out excess moisture, leaving some moisture for tenderness.
  3. In a large bowl, whisk together the flour, cocoa powder, baking soda, and salt until combined.
  4. In a separate bowl, whisk the sugar, vegetable oil, eggs, and vanilla extract until smooth and glossy.
  5. Fold the grated zucchini into the wet ingredients, then add the toasted walnuts and chocolate chips.
  6. Pour the wet mixture into the dry ingredients and fold gently until just combined; avoid overmixing.
  7. Transfer the batter to the prepared loaf pan and smooth the top. Optionally, sprinkle extra chocolate chips or walnuts on top.
