  • 1 (8-10 pound) bone-in, fully cooked ham, spiral-cut or whole
  • 2030 whole cloves (optional)
  • 1 cup packed light brown sugar
  • 1/2 cup unsalted butter (1 stick)
  • 1/4 cup honey
  • 2 tablespoons Dijon mustard
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • 1 (20-ounce) can pineapple rings in juice, juice reserved
  • 1/2 cup reserved pineapple juice
  • Maraschino cherries (optional)

Instructions

  1. Preheat oven to 325°F (163°C). Pat ham dry, place cut-side down on a rack in a roasting pan, and score the fat in a diamond pattern about 1/4 inch deep.
  2. If using whole cloves, press one into the center of each diamond on the fat cap.
  3. In a small saucepan over medium heat, combine brown sugar, butter, honey, Dijon mustard, cinnamon, ground cloves, and nutmeg. Stir until butter is melted and sugar is dissolved, about 3-4 minutes. Remove from heat and stir in 1/4 cup reserved pineapple juice.
  4. Brush about one-third of the glaze over the ham. Arrange pineapple rings on top, securing each with a toothpick. Add a cherry in the center of each ring if desired. Cover loosely with foil and bake for 30 minutes.
  5. Remove foil, brush another third of the glaze over the ham and pineapple rings. Return to oven uncovered and bake for 30 minutes. Baste with remaining glaze and pan juices, then continue baking for another 30 minutes, or until internal temperature reaches 140°F (60°C).
  6. Remove from oven, tent with foil, and let rest for 15 minutes. Remove toothpicks before carving. Slice and serve with caramelized pineapple rings and pan juices.

Notes

For a spicier glaze, add 1 teaspoon chipotle powder or 1/2 teaspoon cayenne. For a honey-mustard version, increase Dijon to 3 tablespoons and reduce brown sugar to 3/4 cup. To prevent burning, tent with foil if glaze darkens too quickly. Let ham rest at room temperature 30 minutes before baking for even heating.
