These turkey cranberry brie sliders are the ultimate solution for holiday leftovers, combining tender turkey, creamy brie, and sweet-tart cranberry sauce on soft sweet rolls, all baked with a garlic butter topping for a golden, gooey finish.

Ingredients

Scale
  • 1 pound (450g) leftover turkey, shredded or thinly sliced
  • 8 ounces (225g) brie cheese
  • ½ cup (170g) cranberry sauce
  • 12-count package sweet rolls (e.g., Hawaiian sweet rolls)
  • ¼ cup (4 tablespoons or 60g) unsalted butter, melted
  • 2 cloves garlic, minced
  • 1 tablespoon Dijon mustard
  • 1 teaspoon poppy seeds or sesame seeds (optional)
  • Salt and black pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C). Take the brie out of the fridge to soften.
  2. Without separating the rolls, slice the entire package in half horizontally. Place the bottom half in a 9×13-inch baking dish.
  3. Arrange the turkey evenly over the bottom layer of rolls.
  4. Spoon the cranberry sauce over the turkey and spread it into a thin, even layer.
  5. Slice the brie into thin pieces (about ¼-inch thick) and arrange them evenly over the cranberry sauce.
  6. Place the top half of the rolls over the fillings and press down gently.
  7. In a small bowl, melt the butter. Stir in the minced garlic, Dijon mustard, and a pinch of salt until combined.
  8. Brush the garlic butter mixture generously over the tops of the rolls. Sprinkle with poppy seeds or sesame seeds if using.
  9. Cover the dish with aluminum foil and bake for 10 minutes.
  10. Remove the foil and bake for another 5-7 minutes, until the tops are golden brown and the brie is melted and bubbly.
  11. Let the sliders rest in the dish for 2-3 minutes before cutting along the seams of the rolls.
  12. Serve warm, sprinkled with flaky sea salt if desired.

Notes

For best results, let the brie come to room temperature before slicing. Use a serrated knife to cut the rolls without squishing them. To prevent sogginess, don’t overdo the cranberry sauce and let the sliders rest before cutting. For extra crunch, toast the bottom half of the rolls for 2-3 minutes before layering. These sliders can be assembled ahead and refrigerated for up to 24 hours before baking, or frozen unbaked for up to 3 months.
