These quick crispy air fryer pork chops with herb rub are a weeknight hero—ready in under 20 minutes with a perfectly crispy crust and juicy interior. Made with simple pantry spices, this foolproof recipe turns a happy accident into a dinner you’ll make again and again.

Ingredients

Scale
  • 4 boneless pork chops, about 1-inch thick
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary, crushed
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon black pepper, freshly ground
  • 1 teaspoon salt (kosher preferred)
  • ¼ teaspoon cayenne pepper (optional)

Instructions

  1. Pat the pork chops dry with paper towels to remove as much moisture as possible.
  2. In a small bowl, combine dried thyme, crushed rosemary, garlic powder, onion powder, smoked paprika, black pepper, salt, and cayenne (if using). Stir well.
  3. Brush each pork chop lightly with olive oil on both sides. Sprinkle the herb rub generously over all surfaces and press it into the meat. Let the seasoned chops sit for 5 minutes at room temperature.
  4. Preheat the air fryer to 400°F (200°C) for 3-4 minutes.
  5. Place the pork chops in the air fryer basket in a single layer, ensuring they are not touching. Cook in batches if necessary.
  6. Air fry at 400°F (200°C) for 8 minutes, flipping the chops after 4 minutes.
  7. Check the internal temperature with a meat thermometer; it should read 145°F (63°C). If not, cook for another 1-2 minutes and check again.
  8. Transfer the pork chops to a cutting board and let them rest for 5 minutes before serving.

Notes

For best results, use pork chops about 1-inch thick. Thinner chops may cook faster; thicker ones may need extra time. Bone-in chops require 2-3 more minutes. Do not skip drying the chops or resting them after cooking. The herb rub can be made up to a week ahead. Leftovers can be stored in the fridge for up to 3 days and reheated in the air fryer at 350°F (175°C) for 3-4 minutes.
