A warm, cozy, and forgiving breakfast bake that tastes like dessert but works as a weekday breakfast. Made with simple ingredients and ready in about 30 minutes, it’s perfect for busy mornings.

  • 2 cups rolled oats (old-fashioned)
  • 1 can (15 oz) pumpkin puree (100% pure pumpkin, not pie filling)
  • 1 ½ cups oat milk (or any milk)
  • 2 large eggs (room temperature)
  • ⅓ cup pure maple syrup
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup chopped pecans (optional)
  • ¼ cup dried cranberries (optional)
  • For serving: Greek yogurt, extra maple syrup, cinnamon (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease an 8×8-inch baking dish with butter or cooking spray.
  2. In a large bowl, whisk together the pumpkin puree, oat milk, eggs, maple syrup, and vanilla extract until smooth.
  3. Add the rolled oats, pumpkin pie spice, cinnamon, baking powder, and salt. Stir with a spatula until evenly combined. The mixture will be liquidy.
  4. Fold in the pecans and dried cranberries if using. Reserve a few pecans for topping.
  5. Pour the mixture into the prepared baking dish and spread evenly. Tap the dish gently on the counter to settle.
  6. Bake for 25-30 minutes, until the edges are set and golden brown and the center is just barely jiggly.
  7. Let cool in the dish for 5 minutes before serving.
  8. Serve warm, topped with Greek yogurt, a drizzle of maple syrup, and a sprinkle of cinnamon if desired.

Notes

Don’t overbake; the center should still have a slight wobble when done. Let the mixture sit for 5 minutes before baking for a creamier texture. For a vegan version, replace eggs with 2 flax eggs and use plant-based milk. For gluten-free, use certified gluten-free rolled oats. Leftovers keep in the fridge for up to 4 days and freeze well for up to 3 months.
